Countdown to Christmas (cake)
It's time to start thinking about making the Christmas cake - this will give the cake time to mature and for the flavours to develop.
Amy Lee, health blogger and author of Nourish in 5 Cookbook created an easy and delicious Christmas cake recipe using the Natural Road Festive Cake Mix (available in store).
The Festive Cake Mix is a premium blend of walnuts, almonds and brazil nuts mixed with plump sultanas, dates, pineapple and apricots.
Make this cake ahead of time and then "feeding" the cake every fortnight by pricking few holes in the top of the cake and spooning brandy or orange juice evenly over the top.

Ingredients:
125g of plain flour
1/2 tsp baking powder
Pinch of salt
1kg Natural Road Festive Cake Mix
200g caster sugar
3 eggs
1 cup of brandy or fresh orange juice
1 tsp vanilla essence
Method:
Grease and line a 20cm round baking tin.
Sift flour, baking powder and salt into a bowl. Add Festive Cake Mix and caster sugar.
In a separate bowl, combine eggs, brandy (or orange juice) and vanilla essence together.
Add egg mixture to the fruit mixture and stir until well combined.
Pour into prepared tin and bake at 150 degrees for 2 hours.
